When the garden is overflowing with zucchini, don’t waste time- make these crispy air fryer zucchini fries pronto! Crunchy, cheesy and crispy on the outside and soft & creamy on the inside, you’ll want to make these all summer long!
French fries are the perfect side to more dishes than I can count, but aren’t always the healthiest as their often laden in oil, salt, and served in too- large portions.
Meet the French fries healthier brother- zucchini fries! Not only does using zucchini provide different nutrients than potatoes (we eat an average of 110 pounds of potatoes per person each year!), but the breading used is gluten free, low in sodium, and packed full of flavor!
How to Make Air Fryer Zucchini Fries
Prepare the zucchini
If you are using a small zucchini you may need two, or just one large. Slice the ends off the zucchini. Cut the zucchuni in halves or thirds (depending on how long it is) so that you’re left with 2 or 3 4 inch sections. Then cut the zucchini into 1/2 inch thick matchsticks (or “fries”).
Make the Egg Wash
You need an egg wash so that the breading will stick well to the zucchini sticks. I tried this with just water and it did not turn out nearly as well, so if you eat eggs, I would recommend using the egg wash.
Beat 1 egg and 2 tablespoons of water together with a fork or a whisk until well combined.
Prepare the Breading
Mix the almond meal, parmesan cheese, basil, garlic powder, and pepper together in a shallow dish.
Making the Zucchini Fries
Get an assembly line started with the zucchini at one end, followed by the egg wash, the breading mixture, and then a clean plate.
Dunk each zucchini stick into the egg wash, making sure to cover it completely. Using a fork or your fingers, place the eggy zucchini stick into the breading, making sure every side is covered in breading, gently pressing it down if it’s have a hard time sticking.
Place the breaded zucchini stick on a plate and repeat with the rest of the fries.
To make zucchini fries in the Air Fryer
Preheat the air fryer to 400 for 2-3 minutes. While you are waiting for it to warm up, spray the top of the zucchini fries with cooking spray.
Place each fry into the fryer basket sprayed side down. Be careful to avoid crowding the fries too much, it’s better to do 2-3 batches than to have all of the fries stuck together! Spray the tops of the fries with cooking spray and place the basket into the air fryer.
Fry for 7 minutes then carefully with a fork or a spatula, flip each fry over. Place back into the air fryer for an additional 6-7 minutes or until crispy.
Can you Make Zucchini Fries in the oven?
Yes! It’s simple to make these zucchini fries in the oven if you don’t have an air fryer or you’re making a double batch and want to cook more at one time.
To make the air fryer zucchini fries in the oven: Follow all of the steps to prepare the zucchini fries (until the air fryer portion). Preheat the oven to 425 degrees f. Spray the bottom of the pan or line with parchment paper.
Place the zucchini fries on the sheet and spray the tops with cooking spray. Bake for 10 minutes. Flip and bake an additional 3-5 minutes or until crisp.
What do you dip zucchini fries in?
I have used marinara sauce as well as ketchup for these fries, and both are delicious!
If watching your sodium intake, be careful of using ketchup! 1 tablespoon of ketchup can have 160mg of sodium. That’s as much sodium as 16 of these zucchini fries! Low sodium ketchup options include: Heinz No Salt Added Ketchup or Walmart’s Great Value 50% less sugar and 50% less sodium Ketchup.

Crispy Air Fryer Zucchini Fries
Equipment
- Air Fryer
Ingredients
- 1 zucchini, large or 2 small
- 2/3 cup almond meal
- 3 tbsp grated parmesan cheese
- 2 tsp dried basil
- 1 tsp garlic powder
- 1/4 tsp black pepper
- 1 egg
- 2 tbsp water
Instructions
- Slice zucchini into 1/2 inch wide, 3-4 inch long "fries".
- Mix the almond meal, parmesan, basil, garlic powder, and pepper together in a shallow bowl.
- In another shallow bowl, make an egg wash with egg and water. Whisk until well combined.
- Create your assembly line dipping a zucchini stick into the egg wash, coating all sides, then in the breading mixture. Place on a plate and repeat with all zucchini.
- Preheat air fryer to 400 for 2-3 minutes.
- Spray the top of the breaded zucchini with cooking spray. Place the zucchini sticks (sprayed side down) in the air fryer basket, being careful to not crowd them too much inside. Spray the tops of the zucchini fries with additional cooking spray.
- Air fry for 7 minutes, flip and air fry for another 7 minutes or until fries are crispy. You may have to do 2-3 batches, depending on the size of your air fryer basket.
