Crispy Air Fryer Zucchini Fries

When the garden is overflowing with zucchini, don't waste time- make these crispy air fryer zucchini fries pronto! Crunchy, cheesy, and crispy on the outside while soft and creamy on the inside, these nutritious "fries" will be your new dinner favorite!

Ingredients

  • 1 zucchini, large or 2 small
  • 2/3 cup almond meal
  • 3 tbsp grated parmesan cheese
  • 2 tsp dried basil
  • 1 tsp garlic powder
  • 1/4 tsp black pepper
  • 1 egg
  • 2 tbsp water

Instructions

  • Slice zucchini into 1/2 inch wide, 3-4 inch long "fries".
  • Mix the almond meal, parmesan, basil, garlic powder, and pepper together in a shallow bowl.
  • In another shallow bowl, make an egg wash with egg and water. Whisk until well combined.
  • Create your assembly line dipping a zucchini stick into the egg wash, coating all sides, then in the breading mixture. Place on a plate and repeat with all zucchini.
  • Preheat air fryer to 400 for 2-3 minutes.
  • Spray the top of the breaded zucchini with cooking spray. Place the zucchini sticks (sprayed side down) in the air fryer basket, being careful to not crowd them too much inside. Spray the tops of the zucchini fries with additional cooking spray.
  • Air fry for 7 minutes, flip and air fry for another 7 minutes or until fries are crispy. You may have to do 2-3 batches, depending on the size of your air fryer basket.

Notes

To bake in the oven: Follow all steps to prepare the zucchini fries.  Preheat the oven to 425 degrees f. Spray the bottom of the pan or line with parchment paper. Place the zucchini fries on the sheet and spray the tops with cooking spray. Bake for 10 minutes. Flip and bake an additional 3-5 minutes or until crisp.
