I have been trying to get in the habit of having something ready and available for me to much on in the mornings (sort of a “pre-breakfast” if you will).
Waking up around 430am each day means I can go a long time without eating anything if I don’t have something prepared and ready to eat quickly.

How to Make Chocolate Chip Banana Baked Oatmeal
- Preheat your oven to 375 degrees F and spray a 9×9 (any medium sized baking dish will work!) dish with cooking spray.
- Combine all of the dry ingredients (oats, flaxseed, baking powder, salt) in a medium sized mixing bowl.
- In a separate bowl, lightly beat the egg, then add the milk, mashed banana, and vanilla extract.
- Pour the wet ingredients into the dry and stir. Once combined, stir in the chocolate chips (the recipe calls for 1/3 cup, but feel free to measure it with your heart).
- Pour the mixture in the pan and spread evenly. Top with sliced bananas and more chocolate chips (optional, but encouraged!).
- Baked for 30-37 minutes or until the edges are golden brown and the middle is set. I made this two days in a row and both times 36 minutes was SPOT on!

Vegan Banana Baked Oatmeal
This dish can easily be made into a vegan baked oatmeal. To do this, you will need to substitute the egg for a flax egg and use dairy free chocolate chips.
To make a flax egg: Mix 3 tbsp of water with 1 tbsp ground flaxseed. Whisk it together and let sit for 5 minutes until the mixture gels and resembles an egg white consistency.
Gluten Free Oatmeal
This recipe is easily gluten free, as oats are technically a gluten free food (as are the rest of the ingredients used). Due to the high likelihood of cross contamination of many oat brands, recommendations for those with celiac disease remains to either ensure that they are purchasing oats that come from a facility that has not been contaminated with gluten or to limit consumption to 1/3 cup per day.
So, long story short, this recipe is gluten free, but if you are concerned just be sure to use oats that have not been produced in a facility containing gluten, which should be listed clearly on the label.
Make Ahead Tips for Baked Banana Oatmeal
You can easily double the recipe and bake this oatmeal in a 9×13 pan. The cooking time may be a bit longer, but the end result will be the same!
Either batch cook so you and the family can enjoy it all week, or eat a few slices and freeze the rest to reheat at a later date.
Can You Freeze Baked Oatmeal?
Yes! This chocolate chip baked oatmeal freezes perfectly. Just wrap the slices in plastic wrap or in an airtight container and freeze up to 2 months.
To reheat, just remove the oatmeal from the freezer, let it thaw in the refrigerator and heat in the microwave. You will likely want to add some extra milk when reheating to soften the oatmeal back up.
What To Serve with Oatmeal
This oatmeal can be a meal by itself, with some nut butter slathered on top and some extra milk splashed in a bowl, or just plain!
I wouldn’t recommend just the oatmeal for a balanced meal, although it does make an excellent snack.
The protein in this oatmeal is only 6 grams, which is not enough for most of us to have at mealtimes. Add nut butter and extra milk, or include this oatmeal alongside some scrambled eggs or with a glass of milk!

Chocolate Chip Banana Baked Oatmeal
Ingredients
- 2 cups old fashioned oats
- 1/4 cup ground flaxseed
- 1 tsp baking powder
- 1/2 tsp salt
- 1 egg
- 1 cup milk any kind of milk. I used 2% regular.
- 1 cup mashed banana 2-3 bananas (Plus one more for slicing on top- optional)
- 1.5 tsp vanilla extract
- 1/3 cup chocolate chips Plus more for sprinkling. semi-sweet, milk, or dark! I used semi-sweet
Instructions
- Preheat the oven to 375 degrees F. Spray a 9×9 or other medium sized baking pan with cooking spray.
- Mix together the oats, flaxseed, baking powder, and salt in a medium mixing bowl.
- In a separate bowl, lightly beat the egg then add the milk, mashed banana, and vanilla extract.
- Combine the wet and dry ingredients, stirring until combined.
- Mix in the chocolate chips.
- Pour the mixture into a baking dish. Top with sliced bananas and additional chocolate chips if desired.
