I’ve tried to give up coffee.. I have. It’s a seriously fruitless effort. That sweet bean juice is as essential to my morning as brushing my teeth or putting on pants.
Despite the jitters and anxiety that follows too much caffeine , one big cup is just the right amount and a couple tablespoons of the perfect creamer with that coffee is a must.
I remember the days when I drank my coffee black. I actually preferred it that way for a couple of years. Today? I like my coffee to a bit lighter, a bit sweeter, and a lot creamier. That is what makes my perfect cuppa’ joe.
This gingerbread coffee creamer is the perfect amount of sweet and spicy and tastes like my coffee married a ginger bread cookie. This has been my go-to creamer all December and I have a feeling it will stay in rotation even after the holidays are over!
Homemade gingerbread coffee creamer versus store bought coffee creamer
I do buy coffee creamer about half of the time. My favorite is the kind that is made from milk, cream, and sugar. The creamers that have a list of ingredients a mile long just taste fake to me, leaving an aftertaste I just can’t get behind.
Homemade creamer can be made easily with ingredients you might already have in the house. Some half and half, spices, and sweetener and you can create just about any flavor you choose. Finding new flavors for your DIY creamer might just become your new hobby.
How to make Gingerbread Coffee Creamer
Step by step, this recipe is too easy not to try yourself!
Step 1: Combine the half and half, molasses, maple syrup, ginger, cinnamon, cloves and allspice in a small saucepan and heat over medium low heat. Stir frequently to avoid burning.
Step 2: After 4-5 minutes, the mixture should be simmering. Let simmer while stirring for 1-2 minutes. The mixture should thicken slightly. Turn off heat and add vanilla.
Step 3: Let cool and store in a covered glass container for up to 1 week.
How to use Gingerbread Coffee Creamer
Use this homemade creamer in place of your regular coffee creamer.

My favorite way to use this easy homemade coffee creamer is in a gingerbread chai latte!
Gingerbread Chai Latte
Add 2 tablespoons of the gingerbread coffee creamer to 1/4 cup of milk. Heat until just warmed. Froth with a milk frother. If you don’t have a milk frother, the one I use is less than $10 and has been making me lattes for over a year!
Pour the frothed creamer and milk into a hot cup of chai tea and enjoy your gingerbread chai tea latte for half the price and half the sugar than it would be at a coffeehouse. Plus you don’t even have to leave your house, which is the biggest win in my eyes.

Gingerbread Coffee Creamer
Equipment
- small sauce pan
Ingredients
- 1 cup half and half
- 2 tbsp molasses
- 1 tbsp maple syrup
- 1/2 tsp ground ginger
- 1/4 tsp ground cinnamon
- 1/4 tsp ground cloves
- 1/8 tsp allspice just a pinch!
- 1 tsp vanilla extract
Instructions
- In a small saucepan over medium heat add the half and half, molasses, maple syrup, ginger, cinnamon, cloves, and allspice.
- Head the mixture for 4-5 minutes, simmering and stirring frequently to avoid burning. The mixture will thicken as it heats. Turn off the heat and stir in the vanilla extract.
- Cool the gingerbread coffee creamer in a small mason jar or other covered glass container for up to 1 week.
